日本で1000年の時をかけて築き上げられてきた独自の食文化を通し、日本人と自然との関係を見つめた日仏合作によるドキュメンタリー。「ひめゆり」の柴田昌平監督が手がけた2013年12月放送のNHKスペシャル「和食 千年の味のミステリー」をもとに、監督自身がフランスへと赴き海外スタッフとともに国際版として完成させた。仏教の肉食禁止令を受け、肉に代わる「うまみ」として自然の中から発見された「だし」にまつわる人々の営みを追った第1章「だし 大自然のエッセンス」、しょうゆやみりんといった調味料の「うまみ」のもととなる麹カビを特殊な撮影によるミクロ映像でとらえた第2章「しょうゆ ミクロの世界との対話」の2部構成で描き、長い時の中で磨かれてきた日本人の知恵と和食創世のドラマを明らかにしていく。第1章のナレーションを木村多江が、第2章のナレーションを奥貫薫がそれぞれ担当した。
A Japan-France co-produced documentary that examines the relationship between Japanese people and nature through Japan's unique food culture, built over a thousand years. Based on the December 2013 NHK Special 'Washoku: Mystery of a Thousand-Year Flavor,' directed by Shohei Shibata of Himeyuri, the director himself traveled to France and completed an international version with overseas staff. The film consists of two parts: Chapter 1 'Dashi: Essence of Nature,' which follows the lives of people involved with dashi, discovered in nature as a substitute for meat-based umami following the Buddhist prohibition on eating meat; and Chapter 2 'Soy Sauce: Dialogue with the Microscopic World,' which captures the koji mold that forms the basis of umami in seasonings like soy sauce and mirin through special microscopic cinematography. Together they reveal the wisdom of the Japanese people, polished over vast spans of time, and the drama of washoku's creation. Tae Kimura narrates Chapter 1, and Kaoru Okunuki narrates Chapter 2.
